Copernicus - Foeder aged beer, Brett IPA
Starting with the same recipe as “Squeezed” this beer spent 5 months in an oak foeder with a blend of Brettanomyces and Belgain saison yeasts. Over this time these wild yeasts and oak turned copernicus into a deliciously complex mosaic of earthy farmhouse flavours, tropical fruits and spices.
7.3 % ABV 45 IBU

Columbus, Amarillo, Citra, Chinook, Mosaic
Hazy straw color, Thin white head
A pungent bouquet of barnyard and tropical fruit aromas combine with a strong woody, vanilla scent from the oak foeder.
An initial strong woody oak flavour and sharp bitterness quickly gives way to a funky blend of horse blanket, pineapple, citrus, black pepper, vanilla, and pine. Copernicus finishes bone dry with its spicy and woody flavours hanging on the tongue and its robust aromas drifting through the nose.
